Stop Trusting Your Eyes: The Real Myths About Cooking Meat

So, for a perfect medium-rare steak, you might pull it at 140°F, let it rest, and it will climb to 145°F—safe and juicy. Why is ground meat different from a steak?

Ground meat is riskier because the grinding process distributes bacteria throughout the meat, not just on the surface.
