Why I Trust a 165°F Reading Over a Pretty Pink Sear

A thermometer isn't just a tool—it's the only honest judge in the kitchen. Here's why I stopped trusting my eyes and started trusting numbers.

Here's a quick tip: when you're reheating leftovers, don't just blast them in the microwave and hope for the best. A warning: don't wash your raw chicken. The CDC says rinsing it can splash germs onto your sink, counter, and other foods (CDC). Instead, pat it dry with paper towels and cook it straight away. The heat will kill the bacteria—your sink won't.

What I'd Actually Do

If you take only one thing from this article, let it be this: buy a reliable instant-read thermometer (they're under $20) and use it every single time you cook meat, poultry, or fish. Check the temperature in the thickest part, away from bone. For ground meat, make sure the patty or meatloaf hits 160°F. For poultry, aim for 165°F. For whole cuts, pull it at 140°F and let it rest for 3 minutes—it'll climb to 145°F safely.

I know it feels like overkill. I used to think thermometers were for perfectionists or professionals.
